    I would love to make these! I am hoping you are speaking of cottage cheese in the tubs? If so, I will just weigh, but Im puzzled at what the texture would be like?

      Hi Melissa!

      My previous answer to your comment got deleted somehow (sorry about that, no idea how that happened!). The cottage cheese I use is a small curd variety and it’s very creamy (it is as thick as a thicker type of creme fraiche although the texture is much grainier). If the cottage cheese you have has a lot of extra liquid, then I would advise to drain the excess from the tub before cooking or you can even let the excess liquid drain by placing the cottage cheese in a muslin cloth in a sieve and waiting for an hour or two. The addition of coconut flakes or coconut meal also ensures proper moisture absorption. Hope that helps!
